3 Ingredient Potato Candy

Makes however much your heart desires
  • 1 small potato, peeled

  • Lots of powdered sugar, 8 cups or more

  • 1 jar creamy peanut butter

    (or any other spread of your choice, things like chocolate chips or sprinkles are even fine!)


















Step 1
Place the small peeled potato in a small pot, cover it with water, and then boil it until it's very tender.
Drain off the water and transfer the potato to a large bowl. Mash the potato with a potato masher or a hands-free mixer until smooth and lump-free.

Step 2
Add 4 cups of powdered sugar to the bowl with the mashed potato and mix until blended (it will be a sticky mess at this point). If you want to use vanilla, mix it in now. Mix in the remaining powdered sugar 1 cup at a time, until mixture is very thick (slightly thicker than cookie dough).

Step 3
Lay down a large sheet of wax paper and sprinkle it generously with powdered sugar. Transfer the mixture to the wax paper and sprinkle the top of it with even more powdered sugar so you can easily roll it out to a 1/4 inch thick rectangle.

Step 4
Spread the peanut butter evenly over the flattened potato candy. Roll it up tightly (long side towards long side) into a long log. Wrap it up in the wax paper, cut the wole thing in half crosswise and put the two halves inside of a large resealable bag.

Seal the bag and chill the candy for at lest 30 minutes or until firm. Alternatively, you can wait to cut it up to 30 minutes before you're ready to serve it.

Step 5
To slice, unwrap the candy and use a sharp knife to cut it into 1 inch thick (not any thinner!!!) slices.

Step 6
Keep refridgerated! Serve or store in an airtight container in the fridge for up to 2 weeks.

If giving as a gift, I suggest putting small pieces of wax paper between each piece or layer in the container that you choose.
